I haven’t seen that video, but I suspect I would agree. RDR2 is something of a paradox.
They did an amazing job on environments and characters, and then turned around and hobbled the game with bizarre PC controls, a save game system and unskippable cut scenes woven from pure contempt for the player’s time, and dog shit mission mechanics that punish the player for any attempt to exercise agency and really have no place in an open world game.
All the major desktop distros play games about as well as one another, assuming you set them up correctly.
Choose a distro based on other criteria, like the release cadence and admin tools that you find most comfortable. If you don’t have any particular needs or preferences, I guess you could save 10 minutes by choosing a distro that installs Nvidia drivers by default, but it’s not going to run games appreciably better than the others.

What’s easy to use is pretty subjective. As a game developer, you’re already at least a step or two removed from the proverbial average computer user. I suggest downloading live images of a few different distros and desktop environments, and playing with each for a while to get a feel for the differences.
I’m a gamer and developer, too. KDE Plasma is my desktop of choice these days.

Regarding that particular requirement:
The Unreal Engine for Linux page indicates that they offer pre-compiled builds for Ubuntu 22.04.
It’s possible that those pre-compiled builds might work on Linux Mint, since Mint is based on Ubuntu. I would probably try this before committing to the officially supported Ubuntu version, both because it’s nice to have a newer distro and because Mint has a good track record of avoiding Ubuntuisms that are not generally well received (e.g. Snap).
If you don’t mind some extra work, you can apparently build Unreal for other linux distros. See here:

This game took mediocre gameplay on rails, and through a great storyline and acting, created something outstanding. I wish I could play it for the first time again. The sequel doesn’t even come close, IMHO.

For anyone else reading this who plans to use Debian Stable for gaming, you really should enable Stable Backports. This gives you the option of newer drivers, kernel, etc. (you pick what you need individually) without having to give up the low-maintenance stability of the base system.
